So since we've started this, I've started doing interval training on the treadmill since I've read a few things that consider it a better fat burning method than running (jogging) a couple miles. Unfortunately, I think I may have gone too fast too fast (if that makes sense) because now my right knee hurts. Not necessarily walking, but def running and sometimes if I move it a certain way. I've started icing it and will continue to do that, but I think if it still hurts after a week or so, I may have to go to the doctor. Yuck.
So now I've got to find a new cardio method - I've never biked, so I'm going to try the elliptical first. Does anyone have any tips?

I'd say take care of the knee injury first. I love the elliptical machine so long as you don't push too hard, it is easier on the knees. Biking is great as well but unless you're on a flat surface the entire time, you can put strain on your knees as well. Think of going up hill. Walk at a nice pace and perhaps increase the time.
